Lobster Pasta Alla Vodka

This lobster pasta alla vodka is creamy and dreamy, with decadent lobster tails. I used a simple vodka sauce recipe and took it up a notch with the addition of lobster. Vodka sauce was actually the first pasta sauce I learned how to make at home from scratch. Of course, this was spurred about by seeing “Gigi Hadid’s Vodka Pasta” recipes all over TikTok! Before COVID, all I was using was jarred sauces… heh heh, so I feel pretty accomplished when I make this sauce.

This is the perfect easy dinner idea for a date night or girls’ night at home! Just adding lobster tails makes this simple pasta dish so much fancier and prettier. It would go perfectly with a glass of wine, some garlic bread, and a side salad…. MMM!

Ingredients

  • 1 lb bucatini or other long pasta
  • 2 lobster tails
  • 3 tbsp butter
  • EVOO
  • 1/4 red onion
  • 4 cloves garlic
  • 1 can tomato paste (6oz)
  • 3 tbsp vodka
  • 1 cup heavy cream
  • 1/2 cup parmesan
  • Parsley for garnish

Instructions
1. Boil your water for the pasta and salt it. Pour in the pasta and cook it to al dente.
2. Set a pan to medium heat and add the olive oil and 2 tbsp butter.
3. Add lobster tail pieces and cook until fully cooked, 2-3 minutes. Remove when cooked.
4. Add the red onion & garlic and cook until softened, about 5 minutes.
5. Add the tomato paste and cook it until it turns dark red, about 3 minutes.
6. Add the vodka and allow the alcohol to cook off, about 1 minute.
7. Pour in the heavy cream and mix it until smooth.
8. Put the lobster tail shells in the sauce and simmer, covered, for 15 minutes. Remove once done.
9. The pasta should be done soon, so reserve a cup of pasta water and drain the pasta.
10. Add 1/2 cup pasta water and parmesan. Mix and add salt to taste. .
11. Add the drained pasta and mix until combined. Add lobster back in and mix.
12. Add butter and stir until melted.
13. Garnish with parsley & more parm and enjoy!
